Recipe | Super Green Vegan Soup

This soup was another one of our creations born out of necessity. It was a cold night in Berlin and we opened the fridge to a few green vegetables.. too lazy to don a coat and head to the market for supplies we decided to stick to our usual mentality for creating food.. when in doubt, blend!
This super green vegan soup is packed with green goodness and is an excellent way to get more green vegetables into your diet. It’s perfect because it can be eaten warm or cold so you can enjoy it all year round. You can spice it up as much as you like, or choose not to add the chilli at all. Quick, easy, nourishing and very delicious.
You Will Need
A blender or a bar mix
A saucepan
A chopping board
A knife
Measuring cups
Ingredients
1 tbs coconut oil for frying
2 zucchini’s
1 leak
1 broccoli (don’t throw away the ‘trunk’ cook the entire broccoli)
1 garlic clove
1 thumb sized chunk of ginger
1 onion
A handful of coriander
1 tsp turmeric (more if desired)
1 tsp chilli flakes
Salt and pepper to taste
Sesame and or sunflower seeds to sprinkle on top
1 L water
Method
1. Heat a large saucepan and using your coconut oil fry the onion until caramelised.
2. Chop remaining vegetables roughly (there going to be pulverised so you don’t need to worry about making them pretty)
3. Add remaining vegetables, except the coriander, to the saucepan and lightly fry them until they become soft.
4. Add water and spices and bring to the boil. Once boiling turn down your saucepan and allow the soup to simmer for 10 mins, or until the vegetables have completely softened.
5. Once the vegetables are cooked turn off the heat and add in your coriander.
6. Using a bar mix or a blender proceed to pulverise the soup until it reaches a thick consistency.
7. You can now taste the soup to see if it needs more spices or salt and pepper.
Tip: If you’ve made it too spicy or you want a super creamy soup then add in some coconut milk
8. Garnish with your seeds and serve warm, or let it cool in the fridge and have it as a cool soup on a summer’s night.
